Since I grew up amidst a typical cheese culture and surrounded by cheese fanatics, I would like to say that I know a bit about what cheese needs to look, feel and specifically taste like to be allowed to be called Cheese. Ever since I turned RPB (Raw Plant Based) literally overnight, cheese was that one line of food I always kept craving for.
It never made sense to me. Why shouldn't it be possible to create cheese with plants instead of dairy? Why shouldn't it be possible to keep all ingredients natural And raw? Insanely curious about, I ventured into exploring the playground of dairy free cheese reconstitution possibilities. So off I went and dug into my JuJue Raw Food Lab to start experimenting.
